Fontina

An Italian original dating back to 1477, this cheese has been influenced by cheesemakers in Sweden and Denmark. Today, Wisconsin cheesemakers produce all 3 varieties. Fontina is somewhat tart with a nutty, earthy flavor. Can be mild or sharp.
