Smokey Wisconsin Cheese Fondue

1 cup Wisconsin Smoked Cheddar cheese, shredded
3/4 cup Wisconsin GruySre cheese, shredded
1/2 cup Wisconsin Pepato or Asiago cheese, shredded
2 tablespoons flour
1 teaspoons ground dry mustard
1 cup dry white wine
1 teaspoon Worcestershire sauce
3-4 drops hot sauce
1 teaspoon Dijon mustard
1 loaf sourdough bread, cut into cubes
1. In a small bowl, combine cheeses, flour and ground mustard. Toss to coat. In a small saucepan, bring wine to a simmer.
2. Add a small handful of cheese to simmering wine and stir until cheese has melted. Repeat process with remaining cheese. Add remaining ingredients and cook on low until mixture is thick and all the cheese has melted.
3. Transfer to a fondue pot and keep warm.
Serve with fondue forks and cubes of bread for dipping.
