What is white Cheddar cheese?

White Cheddar cheese is the original form of Cheddar, without the natural coloring found in the Cheddar most preferred in America. The original Cheddar from England was undoubtedly white, as is much of it today. White Cheddar is also favored heavily in New England, but Vermont is certainly not the only source of aged white Cheddar. As the source of roughly a sixth of the total U.S. Cheddar production, Wisconsin makes some fine mild-to-sharp white Cheddar cheeses.
