Mild Swiss cheese

A lot of people love Swiss cheese; it’s fantastic on a Reuben sandwich or paired with ham. But many folks don’t care for the stronger, harder varieties like Emmentaler, the granddaddy of Swiss cheeses, especially when it’s heated. The stronger culture-related flavors of aged Swiss become unpleasantly amplified in a grilled cheese or panino. Mild Swiss cheese (such as Chalet Swiss) is the answer. While it has a firmer texture than Baby Swiss, its flavor is still sweet and nutty: savory, but not very sharp.
