This classic cheese was developed in 1877 by a Swiss cheesemaker in Wisconsin who actually used clay bricks to press the curds.

We're needing a cheese for a red wine basket gift. It would need to be able to stay unrefrigerated for at least a few days until the recipient receives and stores. If this cheese does not work, do you have any other cheeses that you can recommend?
