the package of cheese that i finally recieved was not fresh. it was older and stale, especially the swiss.

are they all aged cheese

I like the idea of the trio but not the combination. Looking to order for a friend but she likes mild cheddar, colby and maybe muenster. In other words the milder chesses. What do you suggest.I'm in Mequon, WI, but would have it shipped to Cocoa, Florida
They can probably ship anywhere, but as far as the cheese combination all I can say is ask. The cheeses are awesome also. Very good in quality, flavor, and texture.

Are these cheese blocks fully sealed in wax that can be stored for long term food source?
The cheddar and Monterey are fully sealed in wax, the Swiss not. I don't remember how long they they can be stored.

How long will cheese keep in refrigerator if kept unopened in wax/plastic ?
I believe it will last a long time. I still have one (red waxed) from almost a year ago.
